Tahini Sweet Potato Sandwich

This sandwich is the invention of trying to use up a few things in my fridge and being inventive with different flavors. The combination is amazing and makes for a great gourmet sandwich 

Ingredients
1 sweet potato, cut into thin slices
1 tbsp olive oil
2 pieces of bread (or one for a half a sandwich)
1-2 tbsp tahini
1 tsp miso (or more to taste)
Handful of lettuce
Sliced red onion

Instructions
1. Heat oven to 400°. Place sweet potatoes on a baking sheet or in a baking dish in a single layer and sprinkle with olive oil. Roast until tender, about 10-15 minutes. Alternatively, you can heat the potato in a skillet until tender.

2. Toast the bread in a skillet or a toaster. Spread tahini on both sides of the bread, followed by the miso. Arrange lettuce on one piece of bread, then arrange a few sweet potato slices and the red onion.
