We got a big bag of sauerkraut to put on brats and needed something to do with the leftovers. After both thinking about it, we settled on making a soup and it was definitely the right decision. Slow Cooker Black Bean Soup
I don’t use our slow cooker as much as I probably should, however last night I used it so we would have dinner ready when we got back from viewing the Holiday Flotilla, a parade of boats decorated with Christmas lights that run down the intercoastal waterway and back. This Black Bean Soup turned out perfect in the slow cooker. It requires very little prep beforehand and can be made with pantry ingredients. Fall Vegetable Medley Soup
It might not feel like fall here in North Carolina quite yet, but it is starting to cool off at night, making for perfect soup weather. In our last produce delivery we received butternut squash, sweet corn and kale. This medley of vegetables was perfect for a soup. I made up the recipe as I went along but it turned out really good and tasted just like fall should. This soup goes well with the cornbread recipe that can be found in our cookbook.
