This dish was the inventive result of having kale, pasta, and a huge bag of walnuts in my house that needed to get used up. It makes for a quick dinner and can be customized in terms of spices, vegetables, etc.
Ingredients
1/2 box pasta
1 tbsp olive oil
1 bunch kale, torn into pieces
1/2 bag sun-dried tomatoes
1/2 c. walnuts, chopped or left whole
Red pepper flakes
Onion powder
Salt
Instructions
1. Cook the pasta according to package directions. When done, drain and set aside.
2. Heat olive oil in a skillet. Add kale and cook until wilted. Once wilted, add sun-dried tomatoes and cook a few minutes. Add walnuts, red pepper flakes, onion powder, and salt and cook until heated through.
3. Add drained pasta to the skillet. Add additional olive oil if desired.
