Thai Red Curry with Cauliflower
I don’t think I can ever get sick of curries. They come in so many varieties, each one is slightly different. This recipe is wonderful because it involves very little prep if you use frozen cauliflower, which I often do. It is a great weeknight meal and most of the ingredients you probably already have in your pantry. The fresh basil (directly from my herb garden) is the perfect finishing touch although you can substitute it for cilantro if you wish.

Cauliflower Rice Bowls
