Pistachio Biryani

This quick Indian flavored rice dish is perfect for a weeknight meal. The pistachios and raisins give it a unique flavor. If you don’t regular stock pistachios and/or raisins, look for these items in the bulk bin at your favorite health store. We paired it with a simple green salad with homemade dressing for a complete dinner.

It even tastes great as leftovers!

Baked Risotto

Risotto is a great dish to make to use up extra vegetables from the farmer’s market. While traditional risotto is made by stirring in the broth slowly, it tastes just as good when it is baked in the oven. Adding beans to the recipe provides protein for a complete meal. This recipe uses zucchini and green beans but substitute what you have and what is in season. If you eat cheese, mix in a little parmesan or grated white cheddar. Continue reading “Baked Risotto”

One Pot Rice

Although I enjoy making intricate meals, sometimes it is nice to throw everything in a pot and let it cook. This is one of those dishes. It is great when you are short on time and want to put the pot on and let it cook. Fall Vegetable Medley Soup

It might not feel like fall here in North Carolina quite yet, but it is starting to cool off at night, making for perfect soup weather. In our last produce delivery we received butternut squash, sweet corn and kale. This medley of vegetables was perfect for a soup. I made up the recipe as I went along but it turned out really good and tasted just like fall should. This soup goes well with the cornbread recipe that can be found in our cookbook.
